Ingredients

  • 1-3 Cup water
  • 1 tbsp sugar/ honey/ stevia leaves as a sweetener
  • 1-2 lemon
  • 2 bag rooibos tea
  • A few fresh ginger slices
  • Cubes of ice for serving
  • Optional: lemon slices and fresh mint

Instructions

  1. Heat the water until it is nearly boiling and rolling.

  2. For 2 to 3 minutes, steep loose mint leaves and fresh ginger slices in this simmering (not boiling) water.

  3. Place rooibos loose tea in the tea infuser or use tea bags once the water has reached the desired temperature. Allow 3-5 minutes for steeping. If you want it to be stronger, add more tea. When steeping tea leaves, it's best not to use boiling water because it can burn the leaves, making the tea bitter.

  4. When the 3 minutes of steeping time is up, filter the tea into a big pot.

  5. Add a sweetener as per taste to enhance the deliciousness of your rooibos iced tea. Make sure this sweetener is added when the tea is still hot.

  6. To dissolve, stir the infusion well.

  7. Allow the tea to cool for around 30 minutes.

  8. Squeeze the juice of 2 to 3 lemons into the tea once it has cooled.

  9. After adding the lemon juice, taste and adjust to your pleasure.

  10. Keep the jug of tea in the fridge for some hours, so as to enjoy it chilled.

  11. You can add fresh mint leaves and lemon slices to garnish your delightful glass of rooibos iced tea.
